Forget drawn-out poetry—these strawberry love notes are the most heartfelt (and delicious) envelope you could ever give your special someone. These notes, made from pre-made pie crust, open up to reveal a message of your favorite strawberry jam—what more could you ask for. Ready in under an hour, this easy dessert is the perfect sweet surprise to prepare for your darling, or to hand out to all of your bffs this Valentine's Day.
The pie dough.
You can use any refrigerated, store-bought pie dough for this recipe, but we love to use our homemade pie crust. It's buttery, flaky, easy to make (and even easier to make ahead), and can be used for a variety of other Valentine's Day desserts you have up your sleeve.
Top tips:
— Folding. When making your envelopes, fold the edges in from the longer side.
— Foil before filling. While this step isn't necessary, it's a trick that just might come in handy if you'd like your envelopes to be as clean as possible (or if you're looking to stray from baking your filling). Instead of filling your love notes with your jam, place a piece of folded foil in the center of your note, and fold around it. Bake with the foil, then once cooled, remove and add your filling!
— Variations. If strawberry jam isn't your thing, feel free to replace with whatever you'd prefer—raspberry, peach, or even a spicy jam would all be delicious. You can even omit the jam all together, and instead add in strawberry slices after your notes are finished baking. If you go this route, just make sure to follow the tip above—bake with aluminum foil!

Ingredients
- 2
refrigerated pie crusts
Flour for rolling out dough
- 1/2 c.
strawberry jam
Egg wash
- 1/4 c.
Granulated sugar, for sprinkling
Directions
- Step 1Preheat oven to 375°. Line a large baking sheet with parchment paper. On a lightly floured surface, roll out 1 pie crust. Using a paring knife, cut out long diamond shapes, about 4" on each side. Transfer diamonds to baking sheet. Reroll extra dough to make more diamonds. (You should have enough dough to make about 6.)
- Step 2Fill the center of each diamond with a very small dollop of strawberry filling. Fold the corners of the longer side into the center, then fold the remaining corner to meet in the center so that the dough looks like an open envelope. Press down lightly on dough to seal. Use a small heart cookie cutter to stamp out remaining dough into hearts, and place a heart in the center of each
- Step 3Freeze for at least 30 minutes.
- Step 4Brush envelopes with egg wash and sprinkle with sugar. Bake until envelopes are golden, about 15 minutes.
- Step 5Let cool for 10 minutes on baking sheet before transferring to a cooling rack to cool completely.
