This easy appetizer—or satisfying midday snack—is perfect to serve up at any fancy dinner party or festive celebration. Make-ahead friendly and completely customizable, this versatile app adds a boost of fresh flavor to any spread it's served at.
What should I add to my skewers?
These skewers are completely customizable—feel free to experiment with them! We went with many of the classic components: mozzarella, salami, red peppers, artichoke hearts, and even cheesy tortellini. If you're not a fan of something, feel totally free to replace it with something else! Not an olives lover? Pepperoncini peppers would be a delicious substitute; tomatoes are always a welcome addition to any antipasto spread. If salami isn't your thing, feel free to replace it with buttery prosciutto instead.
Really want to take this over the top? Give these skewers a drizzle of balsamic for a stunning final touch.
Can I make these vegetarian?
Absolutely! If you're serving vegetarian guests, simply leave off the salami, and replace with any veggie (or extra mozzarella 😏) your heart desires.
Can I make these ahead of time?
These skewers are a great make-ahead appetizer to prepare the night or morning before your upcoming party. Assemble your skewers, then refrigerate until you're ready to serve.

extra-virgin olive oil, plus 1 tablespoon, divided

fresh cheese tortellini

sliced salami

roasted red peppers, chopped into bite-sized pieces

artichoke hearts, drained and chopped into bite-sized pieces

Directions
- Step 1In a large pot of boiling water, add 1 tablespoon oil. Cook tortellini according to package directions until al dente. Drain and transfer to large bowl.
- Step 2Season cooked tortellini with salt and pepper. Add balsamic vinegar and 1/4 cup olive oil and mix to combine. Set aside.
- Step 3Marinate mozzarella: In a small bowl, add mozzarella balls, Italian seasoning, red pepper flakes, and remaining 1/4 cup olive oil. Mix to combine and set aside.
- Step 4Assemble skewers by layering one piece each mozzarella, salami, roasted red pepper, tortellini, basil, artichoke heart, and green olives.
