Summer calls for a cold, refreshing drink in hand at all times, and we think this frozen watermelon version of the classic mojito is the perfect one. Perfectly sweetened and refreshingly minty, this fruity summer cocktail will be your new go-to poolside drink. Warning: After trying it, you may want to keep watermelon in your freezer all summer long so you’re ready to make one at a moment’s notice. 😉
The mint simple syrup.
If you’ve never made simple syrup before, no stress—it truly couldn’t be easier to make. All you need to do is combine equal parts sugar and water in a small pot over medium heat on the stovetop, and stir until combined. For this mojito simple syrup, we switched things up a bit by adding mint to our mixture. The process is exactly the same, simply discard your mint after you strain your syrup.
The best part? You can make it ahead! Make it up to a week in advance and keep chilled in your refrigerator until you're ready to use. Have extras? Give your favorite mojito recipes an extra flavor boost (we’re looking at you, key lime pie mojitos).
The watermelon.
To get that ideal frozen, slushy consistency, freeze your watermelon before blending it up. You can do this up to 2 hours in advance, or chop some up and keep in the freezer for up to a month. In the meantime, you can use your frozen slices in other blended bevs, like our frozen watermelon margaritas.
