While we love our grilled steak salad, the addition of sticky-sweet peaches in this recipe makes for a perfect combination of sweet and savory flavors. Peppery arugula is the perfect vessel for this simple salad, and the addition of crumbled tangy blue cheese rounds out the entire dish. Ready in under an hour, this dish is fancy enough for date nights, but also easy enough for a weeknight summer dinner.
To make everything even easier, our dressing only requires four ingredients: olive oil, lemon, and salt and pepper. Because our balsamic grilled steak and sweet peaches are the star of the show in this recipe, all we need is a simple dressing to tie everything together. If you're craving an extra sweet touch, feel free to add some honey to this easy dressing.
If you don't have a grill, no problem! You can also use a grill pan to make the delicious balsamic grilled steak.

- Step 1In a large resealable plastic bag or baking dish, combine steak, vinegar, garlic and brown sugar. Marinate 20 minutes at room temperature.
- Step 2Heat a grill or grill pan over high heat. Remove steak from marinate, coat with vegetable oil, and season generously with salt and pepper.
- Step 3Grill until desired doneness, 3 minutes per side for medium-rare. Let rest 5 to 10 minutes, then slice against the grain.
- Step 4Make dressing: In a small bowl whisk together olive oil and lemon juice and season with salt and pepper.
- Step 5Arrange salad: In a large serving bowl, add arugula, peaches, blue cheese or feta, and steak. Drizzle with dressing and gently toss.
