This cranberry bread is full of warm spices and a sweet orange glaze that gets drizzled on while the bread is still slightly warm so that it can seep into the bread. It's perfect with a cup of coffee and the cranberries give a burst of tartness amongst the sweet. It's really a perfect slice of bread that stays forever moist thanks to the vegetable oil. Use fresh or frozen cranberries and there's no need to thaw if using frozen!

Ingredients
For bread
Cooking spray
- 2 c.
all-purpose flour
- 1 tsp.
kosher salt

baking soda

- Step 1Preheat oven to 350° and grease a loaf pan with cooking spray. In a large bowl, whisk together flour, salt, baking soda, cloves, and nutmeg.
- Step 2In a medium bowl, whisk together oil, sugar, egg, vanilla, and zest until combined. Add buttermilk and whisk to combine. Add wet ingredients to dry ingredients and mix until just combined. Fold in cranberries and walnuts.
- Step 3Pour batter into prepared pan and bake until a toothpick inserted in middle comes out clean, about 1 hour and 10 minutes.
- Step 4Meanwhile, make glaze: In a small bowl, whisk together powdered sugar and orange juice.
- Step 5When bread is done baking, let cool 15 minutes, then pour glaze all over bread while still warm. Let glaze soak in while bread cools. Let cool completely before slicing.
