When it comes to the ultimate summer combo strawberries and cream is up there. Whether you like them on your scone or on a wedge of Victoria sponge, it's a delicious English classic. But it might surprise you to know that strawberries work perfectly in savoury dishes. Their juicy, fragrant flavours pair perfectly with salty cheese and rich beef.
Which gave us the idea for our burger recipe that's super easy and great for a summer BBQ. Our speedy relish caramelises onions until sweet, them hits them with balsamic before adding those fruity strawberries. They get coated in the slightly nutty onion sauce and start to macerate (a fancy word for something softening and the juices coming out) which gives you this instant relish that's insanely good against the soft goats cheese and salty beef burger.

Ingredients
For the strawberry relish
- 1 tbsp.
olive oil
- 1
onion, halved and sliced
- 1/2 tsp.
salt
- 1
sprig of thyme, leaves picked
- 3 tbsp.
balsamic vinegar
- 1 tbsp.
sugar
- 250 g
strawberries
For the beef burgers
- 320 g
beef mince
- 1/2 tsp. each salt and black pepper
- 1 tbsp.
vegetable oil
To serve
- 2
brioche buns, toasted
- 2 tsp.
soft goat's cheese
Cucumber slices and a handful of rocket
Directions
- Step 1Start by making the strawberry relish. Place a frying pan over medium heat and add the oil, onions and salt. Stir and gently cook for 10 minutes, or until starting to brown and caramelise.
- Step 2Next, add the balsamic vinegar and sugar, stir and simmer for 1 minute or until slightly reduced.
- Step 3Remove from heat, add the strawberries and stir through. Set aside until ready to serve.
- Step 4To make the burgers, divide the beef in half and form into two patties. Place a large frying pan over medium heat, add the oil and leave to warm.
- Step 5Add the patties to the pan and press down so they are around ½ inch thick.
- Step 6Leave to cook undisturbed for 3-4 minutes aside, or until brown. Flip the burgers, season with salt and pepper and continue to cook for 3 minutes or until they're browned and cooked through.
- Step 7When you're ready to serve, add your burgers to a bun, top with goat's cheese, a generous helping of relish, cucumber and rocket. Serve and enjoy!
