How thinly you slice your courgette will affect how long it'll take in the oven. We recommend checking on the crisps after about an hour, though it'll almost definitely take longer than that. If you have a mandolin, USE IT. These are worth the wait and will even crisp more as they cool. You'll be snacking on these soon, promise!

Ingredients
Cooking spray
- 2
courgette, sliced very thinly into coins
- 1 tbsp.
extra-virgin olive oil (for baked version only)
- 1 tbsp.
ranch seasoning
- 1 tsp.
dried oregano
salt
Freshly ground black pepper
Directions
For oven
- Step 1Preheat oven to 120°C. Grease a large baking sheet with cooking spray. Slice courgette into very thin rounds, using a mandolin if you have one! Pat courgette with paper towels to draw out excess moisture.
- Step 2In a large bowl, toss courgette with oil then toss in ranch seasoning, oregano, salt, and pepper. Place in a single layer on baking sheets.
- Step 3Bake until crispy, about 1 hour 20 minutes, checking after about an hour. Let cool to room temperature before serving.
For air fryer
- Step 1Grease air fryer basket lightly with cooking spray. Slice courgette into very thin rounds, using a mandolin if you have one! Pat courgette with paper towels to draw out excess moisture.
- Step 2Omit oil. In a large bowl, toss courgette with ranch seasoning, oregano, salt, and pepper. Place in a single layer in basket (a little overlapping is fine!).
- Step 3Air fry at 190°C for 6 minutes, then flip and cook for another 6 minutes. Remove golden chips and continue cooking remaining chips until golden and crispy, 2 to 4 minutes, shaking basket every minute to allow for even crisping.
