Ingredients
For the bread
Cooking spray
- 195 g
plain flour
- 1 tsp.
bicarbonate of soda
Pinch of salt
- 150 g
caster sugar
- 55 g
brown sugar
- 1
large egg
- 1
egg yolk
- 125 g
plain yogurt
Juice of 1/2 a lemon
- 1 tsp.
vanilla extract
- 2 tbsp.
lemon zest
- 1
courgette
- 1 tsp.
water
- 65 g
icing sugar
For the glaze
- 65 g
icing sugar
- 1 tbsp.
plain yogurt
- 2 tsp.
water
- 1 tsp.
lemon zest
Directions
- Step 1Preheat oven to 180°C (160ºC fan). Line a 9”-x-5” (22-12cm) loaf pan with parchment paper and grease with cooking spray.
- Step 2In a large bowl, whisk together flour, bicarbonate soda, and salt.
- Step 3In another large bowl, stir together sugars, egg and egg yolk until smooth, 1 minute. Add yogurt, lemon juice, vanilla, and 1 teaspoon lemon zest and mix until smooth. Add courgette, then add flour mixture in 3 additions.
- Step 4Transfer batter to prepared dish and bake until a toothpick inserted into the centre of the loaf comes out clean, about 50 minutes.
- Step 5Let cool slightly in pan, then transfer to a cooling rack to cool completely.
- Step 6Make glaze: In a small bowl, whisk together icing sugar, yogurt, water, and lemon zest until smooth. Drizzle over cooled loaf. Slice and serve.
