Ingredients
- 1 tbsp.
olive oil
- 225 g
spicy Italian sausage
- 225 g
ground beef
- 1
yellow onion, chopped
- 1
green bell pepper, chopped
- 120 g
sliced mushrooms
- 2
cloves garlic, crushed
- 2 tsp.
salt
- 1 tsp.
garlic powder
- 1 tsp.
oregano
- 1/2 tsp.
chilli flakes, plus more for garnish
- 480 ml
chicken stock
- 450 g
pizza sauce
- 1
(400g.) can chopped tomatoes
- 200 g
mozzarella
Mini pepperoni
- 1 tbsp.
chopped parsley
- 35 g
Parmesan
Directions
- Step 1In a large pot over medium heat, heat oil. Add sausage and beef and sauté until no longer pink. Remove from pot onto a paper towel lined plate. Drain fat if needed, reserving some for cooking vegetables.
- Step 2Add onion, bell pepper, and mushrooms to the pot. Cook until onion is translucent and mushrooms and peppers have released some moisture, about 5 minutes. Add garlic and cook until fragrant, 1 minute. Season with salt, garlic powder, oregano, and chilli flakes.
- Step 3Add chicken stock, pizza sauce, and chopped tomatoes. Add back in the meat, stir, and bring to a simmer, stirring occasionally, for 25-30 minutes, until soup is thickened slightly.
- Step 4Top pizza with mozzarella and pepperoni. Cover with a lid and let cheese melt, about 3 minutes.
- Step 5Garnish with parsley, parmesan, and chilli flakes. Serve.
