Step aside, basic pepperoni—this BBQ chicken recipe is our new pizza go-to. While there are plenty of delicious versions of this now-classic pizza (CPK’s BBQ chicken pizza is so iconic we made our own copycat recipe), we believe ours truly has it all: sweet BBQ sauce, tangy gouda, creamy mozzarella, and a hefty dose of red onions and cilantro for freshness. Here's how to make it the best it can be:
The crust.
We chose to use store-bought, refrigerated pizza dough in this recipe to make things as simple as possible. That said, if you’re looking to make your pizza above-and-beyond delicious, our homemade pizza dough recipe is not only fairly easy to create (and makes the exact right amount for this recipe!), but results in our ideal crust: pleasantly chew, golden, and crisp.
The sauce.
Of course, we create this pizza sauce using the star of the show: BBQ sauce. You can really use any store-bought version that you love but if you’re looking for inspo, check out our list of our favorite BBQ sauces, from sweet to spicy. We recommend choosing a sauce that is on the thicker side; if it’s too thin, it won’t provide a substantial base for our cheese, chicken, and toppings. Looking to shake things up? The toppings.
We topped out BBQ chicken pizza with thinly sliced red onion for sharpness, cilantro for freshness, and a pinch of red pepper flakes for a subtle kick of heat. But, you can top your pizza however you please! Drizzle on some hot honey, homemade ranch dressing, or even some pineapple if that’s your thing (no judgement here!).

- Step 1Preheat oven to 500°. Line two large baking sheets with parchment paper and grease with cooking spray. In a medium bowl, stir together chicken and 1/4 cup barbecue sauce.
- Step 2On a lightly floured surface, roll out pizza dough into a large circle, then slide onto prepared baking sheet. Top each pizza with 1/4 cup barbecue sauce, then half the chicken mixture, spreading in an even layer and leaving 1" around the edge bare. Next add an even layer of mozzarella and red onion, then top with gouda. Sprinkle with crushed red pepper flakes if using. Bake until cheese is melty and dough is cooked through, 20 to 25 minutes. Garnish with cilantro before serving.
