Is any dessert more summer-worthy than a fresh, bubbling fruit cobbler? Here at Delish, we think not. We’ve created our fair share of cobbler recipes, from our berry campfire cobbler to blueberry to classic peach. For this recipe, we decided that blackberry deserved its time in the spotlight. While it’s often overlooked for more popular summer fruits, blackberry’s power shouldn’t be underestimated. Sweet yet perfectly tart, this fruit gets its chance to shine in this warm blackberry cobbler, complete with our perfect biscuit topping.
The blackberries.
When they’re in season, we recommend using fresh blackberries in this cobbler to take advantage of their peak flavors. If you can’t find fresh blackberries, then frozen is your next best option. Just let the fruit thaw out first beforehand, then make as instructed. If you’re not a blackberry fan—no prob! This cobbler can be made with any of your favorite fruits, from peach and blueberry to strawberry.
The biscuit topping.
This is our ideal, perfected cobbler topping: sweet, slightly crumbly, but firm enough to hold its own against the jammy fruit filling. Sprinkle on some coarse sugar for added texture and sweetness, and you’ve got a perfect cobbler topping for any (and every) fruit filling.
Serving.
Let’s be real—no cobbler is complete without a scoop (or two) of ice cream on top. The fresh cobbler warms the vanilla ice cream, creating a creamy fruit filling that perfectly contrasts our bubbling dessert. Trust us, you don’t want to skip this.
Storage.
If you have any leftovers, store them in an airtight container in the fridge for around 3-4 days.

Ingredients
For the blackberry filling
- 6 c.
blackberries
- 1/2 c.
granulated sugar
Juice and zest of 1/2 lemon
- 1 tbsp.
cornstarch
- 1 tsp.
pure vanilla extract
Pinch kosher salt
For the cobbler
- 1 c.
all-purpose flour
- 1/4 c.
granulated sugar
- 1 1/2 tsp.
baking powder
- 1/2 tsp.
kosher salt
- 4 tbsp.
butter, cubed
- 1/4 c.
milk
- 1
large egg, lightly beaten
Egg wash, for brushing
Coarse sugar, for sprinkling
Breyer's vanilla ice cream, for serving
Directions
- Step 1In a large bowl, toss blackberries with sugar, lemon juice and zest, cornstarch, vanilla, and salt. Let sit 30 minutes.
- Step 2Preheat oven to 350º. In another large bowl, whisk together flour, sugar, baking powder, and salt. Work in the butter with your hands until combined, then stir in milk and egg until just combined.
- Step 3Transfer the blackberry mixture to an oven-safe skillet and top with dollops of dough.
- Step 4Brush dough with egg wash and sprinkle with coarse sugar.
- Step 5Bake until biscuit topping is deeply golden and blackberry mixture bubbly, 45 minutes.
- Step 6Let cool 10 minutes before serving with vanilla ice cream.
